Ginger Pear Pancakes
Ingredients
- 1 1/4 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 Tbsp brown sugar
- 1 large egg
- 1 1/4 cups whole milk
- 1 1/2 tsp ginger freshly grated
- 2 Tbsp unsalted butter melted
- 1 pear peeled and cored
- 1/2 tsp pure vanilla extract
- vegetable oil as needed

Instructions
- In a small bowl stir together flour, baking powder, baking soda, salt and brown sugar. Set aside.
- In a medium size bowl whisk egg, milk, ginger, butter and vanilla until combined. Add dry ingredients all at once and whisk until combined and smooth, but do not over mix. Cut pear into 1/4" dice and gently stir into batter.
- Heat griddle to medium and drizzle with a few drops of oil. Pour approximately 1/4 cup of batter onto griddle for each pancake. Cook 2-3 minutes until the pancakes starts to bubble, flip and continue to cook for an additional 1-2 minutes. Remove pancakes as they cook and keep warm in a low oven. Serve with your favourite syrup or warmed pear preserves.
