One of my favourite leisure activities is to thumb through a copy of Bon Appetite or Gourmet Magazine, studying the photos, perusing the recipes, taking in an article and stopping only to refill my wine glass. It could be the latest copy or something from 2005, because yes, I keep them all! It really doesn’t matter since something from 2005 seems just as new and inviting to me as my current crisp edition. For me it’s the “down time” and a time to let my imagination wander to the possibilities after reading a recipe. So Mango Peach Margaritas is my little version of just such a recipe I happen to come across.
Today I’m sharing a variation of Gourmet’s Mango Frozen Margarita. My first instinct was to make it more of a frozen slushy type of drink but quickly noticed that the even with the ice, the mixture tends to be more of a fruity puree by using soft fruits such as mangos and peaches. It’s got a fruity sweetness that’s jazzed up with a good dose of lime and tequila. I find it to be the perfect fruit blend to share with my girlfriends even when I don’t have the best of blenders. You know the ones that leave behind little bits that just won’t blend? Even though I made the mixture in advance I simply threw it in the freezer and gave it a quick whiz in the blender when my pals arrived. And good pals will happily chew on any itty bitty stray fruit chunks without complaint. Enjoy!
Recipe source for Mango Peach Margaritas: Adapted from Gourmet’s Mango Frozen Margaritas
- 2 cups ice
- 1 cup frozen mango chunks
- 1 cup frozen peach slices
- 1/2 cup tequila I used gold
- 1/4 cup Grand Marnier
- 1/4 cup fresh squeezed orange juice
- 1/4 cup fresh squeezed lime juice
- 3 tbsp agave syrup
- Place all ingredients in a blender and blend until smooth. Pour into glasses and serve immediately. If serving later, you can freeze and re-blend when ready to serve or refrigerate and serve with ice. Makes about 4 cups.
