It’s not the quickest risotto, having to sauté the bacon and mushrooms first, but the combination is fantastic and worth the extra effort. I like to add the cooked bacon and mushrooms at the end, that way they retain their texture, especially the bacon. For me, it’s best with a little bit of crispiness and chew, giving the risotto some texture.
