
Ginger Pear Pancakes
Are you compelled to have lazy Sunday mornings with no fuss, plenty of coffee and your favourite pancakes? Indulge yourself while keeping it simple with Ginger Pear Pancakes. There’s nothing fussy or complicated here, just a spattering of fruit and ginger in a traditional pancake batter. These pancakes are whipped up fast and easy but deliver on flavour with the pear and ginger combination. The fresh ginger adds a warm spiciness, while the pear adds a little sweetness and texture. These pancakes are slightly crisp on the edges, very fluffy and studded with fruit on the inside.


This recipe originates with Williams-Sonoma, not only a fabulous cookware shopping experience but home to many wonderful recipes. It’s founder Chuck Williams was instrumental in introducing French cookware to the average American in the 1950’s. (who doesn’t covet a piece of Le Creuset?) Over the years it developed into a mail order catalog, 600 stores and countless cookbooks. Chuck Williams was 100 years old when he passed away in December 2015 but his contributions to how we cook are felt in recipes such as this one and the cookware we still use today.

- 1 1/4 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 Tbsp brown sugar
- 1 large egg
- 1 1/4 cups whole milk
- 1 1/2 tsp ginger freshly grated
- 2 Tbsp unsalted butter melted
- 1 pear peeled and cored
- 1/2 tsp pure vanilla extract
- vegetable oil as needed
- In a small bowl stir together flour, baking powder, baking soda, salt and brown sugar. Set aside.
- In a medium size bowl whisk egg, milk, ginger, butter and vanilla until combined. Add dry ingredients all at once and whisk until combined and smooth, but do not over mix. Cut pear into 1/4" dice and gently stir into batter.
- Heat griddle to medium and drizzle with a few drops of oil. Pour approximately 1/4 cup of batter onto griddle for each pancake. Cook 2-3 minutes until the pancakes starts to bubble, flip and continue to cook for an additional 1-2 minutes. Remove pancakes as they cook and keep warm in a low oven. Serve with your favourite syrup or warmed pear preserves.
