Whether it’s for Mother’s Day, Easter, or wedding shower, Earl Grey Punch is a lovely sipper! But don’t be fooled by the name, this punch packs a punch with its white rum and apricot brandy. Only slightly subdued by a generous dose of citrus juice from limes, oranges and lemons, it’s not for your grandma’s punch bowl with the glasses hanging off the side. It’s fresh and bright with a small undertone of earthiness from the tea, making it the perfect afternoon cocktail.

      Servings: 6 ounce cocktails
      Instructions
      1. In a small bowl combine white rum and loose earl grey tea. Allow mixture to sit for 1-2 hours.
      2. Strain rum and add to a small pitcher. Add remaining ingredients except for ice and mint, stir to combine.
      3. Pour over ice and garnish with fresh mint leaves if desired.

      This year I’m smitten, not because of a new romance, but because I’ve had the pleasure to love the same man for more than 20 years. With this kind of time comes an understanding of moods, fleeting kisses, cuddles, and the contentment to spend the evening watching television. Little is expected in the way of fancy gifts and expensive roses on Valentine’s Day, it’s a cozy meal and quality time together that means the most to us. And while we would normally reach for a bottle of wine, this year we celebrate our time together with a fruity and flirty Raspberry Rum Punch.

      The vibrant colour and fruity taste makes it a delightful cocktail to sip and enjoy with your sweetheart. In fact, it’s even better with your long time love because it’s out of the comfort zone. Something new and refreshing! A slightly fizzy cocktail to “cheers” each other, with a love that is signified with the comfort found in one another. The fact that this cocktail is vibrant with raspberry flavour and rather delicious doesn’t hurt either. It might just mean we’ll have to have two. Happy Valentine’s Day!

          Raspberry Sauce
          1. In a small sauce pan over medium heat stir together all ingredients and allow to cook down, mashing berries as it does, approximately 2-3 minutes. Bring to a simmer over medium heat and cook for 1 minute. Remove from heat and strain through a fine mesh sieve, pushing on the solids to extract the juice. Can be made ahead, covered and refrigerated until ready to use. Yields approximately 3 ounces.
          Cocktail
          1. Fill a cocktail shaker half full with ice. Add rum, Grand Marnier, raspberry syrup and a generous squeeze of lime juice. Shake until cold, about 30 seconds. Divide equally between two cocktail glasses and top up each with an approximate ounce of soda. Serve immediately.

          Spiced Banana Tarte Tatin

          So few ingredients never tasted so good!  Spiced Banana Tarte Tatin is a simple yet stunning dessert, and served individually, fantastic for an intimate gathering.  Banana slices sweetened with brown sugar and lightly spiced with cinnamon, cardamom and ginger makes for a delicious syrupy sauce.  Flaky golden puff pastry provides the base to cradle all the sweet goodness to the table.

          When choosing to make this recipe I quickly realized I did not own 1” high ramekins.  So on the hunt I went with little success for the exact size.   I did manage to find 5” wide ramekins that were 2” high.  On the trial run however, the puff pastry did not cook thoroughly nor did it brown since the sides of the ramekins were too high.   It just ended up to be a flat, pale and limp crust, in other words, a big FAIL!

          Of course the local search continued because I wasn’t about to give up that quickly.  As luck would have it, I stumbled upon an approximate 5” x 1” ceramic dish.  The oddly purple ceramic dishes were found in the pet section of the dollar store, yes they are pet food dishes!  Judge me if you will but they worked wonderfully with their slightly tapered side and appropriate height.  Use what will work,  just be sure to they are 1” high.  The height is key in this recipe to obtain golden flakey pastry.

          I love this recipe because it’s simple yet elegant and can be put together at the last minute with everyday ingredients.  Enjoy!

              1. Preheat oven to 400℉. In a small bowl combine brown sugar and spices. Smear 1 tbsp of butter onto the bottom of each 5" round x 1" high ramekin. Sprinkle an approximate 2 tbsp brown sugar spice mix over butter. Slice bananas into approximate 1/8" slices and arrange in a concentric circle over the brown sugar, overlapping each slice just slightly. Drizzle 1 tsp rum evenly over bananas.
              2. Cut puff pastry rounds to fit the ramekin and prick with a fork. Lay pastry over bananas, tucking in the edges. Arrange ramekins on a large cookie sheet to catch any drips. Bake in preheated oven for 30 minutes until puff pastry is puffed and golden. Remove from oven and allow to rest for 1-2 minutes. Invert each ramekin onto serving plate and serve with vanilla or caramel ice cream.
